The stuff that is sold in stores as kielbasa is not meat. It is an unknown substance created by those thinking of meat. Only kielbasa such as this would be sacrificed to make candied kielbasa. Now REAL kielbasa is another story altogether!

Hills ire Farm and that is so full of soy. Terrible!

I found this Cavanaugh kielbasa at SAMs Club. Face it, in Alabama, it is hard to find fresh made. http://www.samsclub.com/sams/shop/product.jsp?productId=prod1480490

If you are scratching your head wondering what to feed your family while fasting, I came up with a rather festive shrimp dish that my family really liked:

Saute one chopped onion and many chopped multi color peppers (red, yellow and orange) in a tablespoon or two of olive oil in which you have already sauteed some garlic until it becomes aromatic.

After they are soft, add a little salt and pepper and remove them to a dish, and add another tablespoon or two of olive oil to the frying pan.

Then add a tablespoon or two (depending on how spicy you like your food) of Caribbean JERK seasoning (don't worry if it sounds exotic, it can be found in any supermarket spice aisle)to the oil, and then add a pound of cleaned and deveined shrimp.

Sautee the shrimp in the jerk seasoned oil until both sides of the shrimp turn nice and brown, and then add back the sauteed onion/pepper mixture and mix it altogether until the shrimp are fully cooked.

Serve over a bed of brown or white rice. You can sautee some slivered almonds and add to the rice for more texture, interest and crunch..

Hey Alice, I have tried something similar in the past and it was very nice. But try 5-spice powder (Hanyu Pinyin), available in the Chinese section instead of jerk. It's wonderful!

I think I'll try it both ways, especially since it's so often implied that we Melkites will never be satisfied until we have it all biggrin

Many years,
