Optimistic: The upcoming Synod selects a replacement, then Rome gives its approval 'in the fullness of time'.

Pessimistic: The upcoming Synod selects an Administrator, Rome approves (I may be wrong on this point), empires rise and fall, a new eparch is found, Rome gives its approval 'in the fullness of time'.

What happens if the upcoming Synod elects a bishop, does not seek Rome's approval, and proceeds to install him?

Or is this not possible, given the Oriental Congregation and Rome's insistence on managing all Eastern Catholic Churches "outside their traditional territories"?

Will never happen. PATRIARCH Sviatoslav was confirmed by Rome, what makes you think the Eparchy in Chicago can get away from it?
