Dear Karen, the change for the children is automatic with a change of church sui iuris for the parents. When you or your husband becomes Greek Catholic of whatever church, Ruthenian, Ukrainian, Melkite, etc. the children become the church of the parent until they are old enough to request a change on their own.
The child is fully initiated so the child's role is really no different from an adult as they share in the fullness of Christian initiation by receiving the Eucharist. Some parishes that are larger try to have a children's choir. If they are boys they can be taught to serve at the altar. They can be taught to assist in reading. They can ring the bell, hand out things for the priest or deacon and assist in other ways as they can. Most pastors nowadays are eager to encourage the younger people to participate.
There is an older children's formation program, the God With Us program, which is showing its age now. It is still available for grades 1-8 from Theological Book Service from the Redemptorists,

We have found many Orthodox materials to be quite good for liturgical preparation in our homeschooling efforts.
