Marc, apologies if this has been addressed, but I didn't see a reply to this query.
My understanding in Orthdoxy is that the restriction is that only one liturgy may be celebrated in one altar on one Antimension in a single day. I'm not sure how parishes that do more than one daily liturgy work around this restriction.
The other constraining factor is the fast the celebrant must maintain. By consuming the elements the pre-communion fast is broken.
