the maronite rite is really cool...i heard they also chant in aramaic, is that true ?

Yes. By Patriarchal directive portions of every Divine Liturgy are chanted in Syriac (Aramaic).
This includes, but is not limited to, the Trisagion, and the Institution Narrative in the Anaphora. It can be breath-takingly beautiful, and one feels a direct link to Our Lord.
