Sister Marie Keyrouz, a Maronite by birth but now a Melkite of the Congregation of Basilian Chouerite Sisters, has several CDs of Melkite, Greek Byzantine, and Maronite liturgical chant, as well as Western chant (although I've read criticism of her rendition of the latter). See:
