I think Latin riters know the difference between "rites" and "Churches." I disagree. By and large, they treat the two as synonomous when applied to the Eastern churches.

That's been my experience as well. Although, we are talking of course of the small percentage who actually know the eastern churches exist, as most don't know enough to call them anything.

Actually I'd say the point is rather moot vis-a-vis "rites" and "Churches" as understood by Latin Catholics, since I'm of the opinion that most Latin Rite Catholics don't have much of a clue that any other rites or Churches exist within the Catholic Communion.
