I thought they were called spoonerisms or alternatively Freudian slips.

Spoonerisms were named after the late Dr. Spooner, a Methodist Minister, who made some humorous slips of the tongue during his lifetime.

When giving a toast to the Queen of England, instead of saying:
"To the dear old Queen,"
he said "To the queer old dean."
