My wife stumbled across a lunch possibility for Great Lent that I have tried and enjoyed.

BirdsEye makes a frozen entree that is microwaved in a bag in about two minutes. It consists of quinoa, spinach, red peppers, and a lemon sauce.

I'll have to look for that. Since I don't have an Orthodox wife, Lent drives me crazy trying to shop, cook, and eat the right things.

BTW - for breakfast. We have a wonderful bagel shop that makes a "Garden of Eden" bagel. Lots of veggies and I am sure to remind them to "Hold the cream cheese." Excellent!

Breakfast: I learned to eat my oatmeal without milk, salt, sugar, or anything more than a bit more hot water to thin it years ago when I was experiencing some medical issues. So breakfast for me is no problem. I also learned to eat my toast dry without butter or anything else. (During a long period, I was so severely restricted that the fasting rules became a way of life.) The only liquid I could tolerate was water.

So this BirdsEye find was a blessing sent from Heaven. It can be sporadic, however, due to "supply chain issues." (roll eyes)
