1. Basically. Our situation is similar to the first millennium when pretty much all apostolic churches were in communion with each other, forming one church but maintaining self-governance and unique traditions. That being said, what you get is largely dependent on parish. Some EC parishes are more eastern than most EO parishes; some seem to try their best to be mistaken for Romans. As far as the official position is, we are supposed to gradually remove so-called Latinizations that have crept into our churches over the years in favour of returning to our roots. That is going faster in some places than others, but it is happening.
2. They are our sister churches outside of communion with Rome. IIRC, we are supposed to try to keep as much the same between our EC churches and their respective EO churches as is reasonable - for example, we commemorate the Pope and our bishops during litanies where EO would only mention their bishops.
3. No. Saints are saints. Personally, I have a growing devotion to (St.) Alexis Toth. Rome has even recognizes some EO (and Oriental Orthodox) saints. There a bit of related discussion here (and some others internet sources through Google if you're interested):
