This delicious salad is ideal as a buffet dish or to accompany a barbecue.
Serves4
Ingredients
�1 1/2 cups lentils
�Pinch curry powder
�2 Granny Smith apples
�8 cooked baby beetroot or 1 cup - diced beetroot
�1 small carrot (grated)
�2 tsp olive oil
�Juice of 1 lemon
�Salt and freshly ground black pepper
�6 tbsp parsley (pieces)
Method
1.Soak lentils for at least 30 minutes in cold water. Place lentils in a saucepan, cover with three times their volume of water and season with curry powder. Bring to boil and simmer for about 20 to 30 minutes until tender. Drain lentils and allow to cool.
2.Peel and core apples and cut into pieces. Mix together with apple pieces, diced beetroot, grated carrot, olive oil, lemon juice and lentils and season with salt and pepper.
3.Add chopped parsley just before serving. ~Angie

Great lenten recipe, Pani Rose! smile

I never thought of the addition of apples, but will definitely try it next time.

I have often used curry powder with lentils. It goes very well.

Also, lentils dressed with olive oil like this, make a hearty main course for the Great Fast when served over rice, brown or white.

Another recipe for lentils is to start with diced onions, carrots and celery sauteed in olive oil, cooked lentils added to heat through, and spices of your choice...

I also add walnuts or almonds for more texture and flavor (not to mention health benefits)...and of course, dressed with some more extra virgin olive oil, salt and pepper.

Lentils are a VERY INEXPENSIVE and nutritious legume to eat. (During difficult economic times, Greeks always turned to the humble lentil for sustenance)
