High in protein with the avocados and black beans:

AVOCADO BEAN SALAD

1 can black beans, rinsed
1 bell pepper, chopped - or one small can of "Mexicorn"
2 RIPE avocados, chopped
1/3 cup chopped cilanto
1 cup commercial salsa
For extra kick - 1/2 tsp oriental chili garlic sauce

MIX!

ALTERNATIVE:

Substitute about 2 cups of “Fresh Cuts Southwestern Salsa” for the beans and pepper.

If making a greater or lesser quantity use 1 cup salsa per avocado

NOTE: The salad loses its visual attractiveness rather quickly. Should be mixed just before eating.

Who says fasting must be bland and boring?

Why not? I usually like some exotic cuisines for fast seasons. After all, I live not too far away from a South Indian buffet, and I know they have a lot of vegan food in their culture, and I can deal with a little kick to food once in a while.
