For those of us living at a great distance from our Greek Catholic communities (or isolated altogether!), could any of our ByzCath friends recommend reader services or a schedule of services that could be modified for reader service use this week (Pascha inclusive)?

Normally you could skip all the litanies and priestly prayers, but read the texts and scriptural readings.

Thanks for the pointers.

Any suggestions as to which services would be easiest to convert to reader services for the remainder of Holy Week? For example, would it be appropriate to celebrate a reader Vespers & typika service on Holy Thursday evening?

Vespers and Matins are usually the simplest to take as reader's service.

You might also do a search for parishes that might be broadcasting them online. One example is Saint John the Baptist Cathedral in Washington, DC, which broadcasts most of the major services live and then makes them available for on-demand. It's a mixture of English and Slavonic. https://www.youtube.com/user/StJohnDC

Christ the Saviour Orthodox Cathedral of the ACROD in Johnstown, PA has an extensive streaming schedule. ACROD.org. The order, singing etc.. would be most similar to the Ruthenian Eparchies.
