1. Who were the principal Eastern Catholic theologians involved in Vatican II? Did any of them write any books that would be good to read etc.?

2. What are 2-3 solid books that explain the fundamentals of Eastern Catholic theology?

in re 1: I don't know. Hopefully someone else at this forum will be able to answer.

in re 2: I don't know many Eastern Catholic authors. However, Eastern Orthodox theology is pretty close. You might want to consider Bishop Kallistos Timothy Ware's "The Orthodox Way" and Vladimir Lossky's "The Mystical Theology of the Eastern Church."

I believe that this answer is also part of the answer to the first question.

From the same site you linked to. A Special Memorial Archbishop Joseph M. Raya [madonnahouse.org]

In 1962 and 1963, he was appointed to the Curia of the Melkite Holy Patriarch to serve as a research aide at Vatican II.
